Alpha Amylase Enzyme is used as a mashing aid to convert starches into simple sugars that are fermentable by brewing yeast and are typically used for all-grain batches.
Quick Tips
- Alpha Amylase is often used during fermentation for most types of beer and craft spirits
- Alpha requires a higher working range temperature (about 152 – 158 degrees F) than Gluco Amylase
- Although Alpha IS used with something like baker’s yeast, you DON’T need to add it if you’re using many turbo yeasts so check your yeast’s label
2oz (57g)
Use 1 teaspoon per 5 gallons (5ml per 19L). 1 package is good for about 60 gallons.

Alpha Amylase Enzyme. I have tried other Alphas before, with mixed results. I have had very good luck with this product for breaking down starches in my wart. I would recommend this product.

Alpha Amylase Enzyme. I’ve been doing this for quite a while now, I’ve used a lot of enzymes. This is the best Alpha I’ve used.

Alpha Amylase Enzyme. Follow the directions for the temperature range and it will break any starch lock.

Alpha Amylase Enzyme. I was skeptical at first but now that I’ve done 4 runs with this I have to admit it really brings the flavor through better than relying on the old method.
