Alpha Amylase Enzyme is used as a mashing aid to convert starches into simple sugars that are fermentable by brewing yeast and are typically used for all-grain batches.

Quick Tips

  • Alpha Amylase is often used during fermentation for most types of beer and craft spirits
  • Alpha requires a higher working range temperature (about 152 - 158 degrees F) than Gluco Amylase
  • Although Alpha IS used with something like baker's yeast, you DON'T need to add it if you're using many turbo yeasts so check your yeast's label

    Alpha Amylase Enzyme. I was skeptical at first but now that I've done 4 runs with this I have to admit it really brings the flavor through better than relying on the old method.

    Alpha Amylase Enzyme. Follow the directions for the temperature range and it will break any starch lock.

    Alpha Amylase Enzyme. I've been doing this for quite a while now, I've used a lot of enzymes. This is the best Alpha I've used.

    Alpha Amylase Enzyme. I have tried other Alphas before, with mixed results. I have had very good luck with this product for breaking down starches in my wart. I would recommend this product.
