This recipe uses a very high percentage of corn balanced with malted barley to produce a mash with strong corn character, full body, and excellent fermentation performance. The simple grain bill allows the natural sweetness of corn to shine while the malted barley provides the enzymes needed for reliable starch conversion and clean fermentation.
Flaked corn makes mashing easy without cooking, and professional alpha-amylase enzymes help ensure efficient conversion and consistent results. The included distillers yeast with gluco-amylase enzymes allows the mash to ferment completely to approximately 9–10% ABV.
Rice hulls are included to keep the mash loose and easy to stir, making this grain mash kit for home distilling ideal for fermenting and distilling on the grain using traditional methods.
This style can be enjoyed as a classic white whiskey, or aged on new charred oak to develop rich caramel, vanilla, and toasted wood flavors similar to traditional bourbon.
