This recipe combines malted barley with peated malt to produce a mash with deep grain flavor and distinctive smoke notes. The high malt content provides natural enzymes for conversion, while the included alpha-amylase ensures consistent results even for beginners.
Rice hulls are included to keep the mash loose and easy to stir. The included distillers yeast with gluco-amylase enzymes allows the mash to ferment cleanly to approximately 9–10% ABV while preserving full malt flavor.
